SKYE STEELHEAD ®
 

The northwest isles of Scotland are some of the most rugged yet tranquil parts of Scotland. Roads that meander through rugged terrain, pristine lochs, & trees that seem to hang off the mountains. Among these isles, the Isle of Skye Stands out. It is off this and surrounding isles that Skye Steelhead Scottish Ocean Trout is raised to perfection by the Cannon family.

This small scale boutique farm is run by farmers that live, eat, and breathe for their fish, and is joked that the farmers even name the fish individually. This care is not only for the fish but for every aspect of its inputs. Extra cost is spent to procure the highest quality feed that uses a higher percentage of fish oil to ensure the health of the trout and to pass that on to us.

The resulting product is something you have to taste to believe, slightly milder than salmon with a higher fat content that yields one of the most buttery tasting fish you have ever had.

TASTE PROFILE

Skye Steelhead has a slightly milder flavor when compared to salmon, but very similar taste. Many people mistake it for salmon. Its taste will be light, with a sweet finish when cooked. Raw it will have a "buttery" & "sweet" finish with a firmer texture loved by many sushi chefs.

ASTAN® TUNA - SUSTAINABLY LINE CAUGHT
 

Wild Line Caught Sustainable Tuna.

Our tuna is caught using the same old fashioned methods since the start of fishing, using just hook & line the old fashioned way. No giant nets that lead to overfishing & huge bycatch problems usually seen in commercial tuna fishing.

This method is also much more sustainable than net fishing tuna as the tuna are targeted based on area & depth.

Another tool to avoid bycatch in this fishery is by using circular hooks. World Wildlife Fund (WWF) works closely with partners to advocate the use of circle hooks to reduce bycatch without affecting target catch like tuna and billfish. This type of hook is sharply curved back in a circular shape with the barbed end lying perpendicular to the shank

In addition our tuna is also sustainably certified wild caught, so you can finally feel good about the tuna you are buying & eating.

SALTWATER STRIPED BASS
 

About 80 miles just south of San Diego, California lies the Island of Todos Santos (All Saints). This island is unique as it lies only 12 miles off shore but has a unique ecosystem & currents due to the deep water submarine canyons that surround it.

These same strong currents and deep underwater canyons are what make the Isla de Todos Santos one of the most famous big wave surfing breaks aptly nick named "killers", where in winter these crashing waves can reach over 40 feet!

This unique underwater topography allows deep water upwelling to bring nutrient rich deep clean water combined with fast currents that makes the ideal location to sustainably raise our saltwater striped bass.

CARRIBEAN COBIA
 

You might have never heard of Cobia, but once you taste it will become an instant favorite. This unique fish is commonly know on the south east coast of the USA, but still what we consider one of the best tasting, healthiest underrated fish in the world.

A "meaty" white fish, with a texture closer to steak, an extremely mild taste that everyone loves, and packed full of omegas just as much ore MORE than salmon! And to top it off one of the most sustainable farms in the world.

Also this fish can basically be prepared any way, grilled, broiled, baked, seared, fried... and because if its dense texture and extremely high oil content its almost impossible to over cook..

 

Sustainably raised, ten plus miles off the shore of the beautiful Panama Coast. In these crystal blue open ocean waters in fully submerged under water "globes" at depths of up to 250 feet. In this natural habitat the cobia swim freely and school naturally in extremely low stocking densities.

Deep ocean offshore aquaculture in fully submerged sea stations has lower environmental impacts than traditional near shore operations and can actually help ocean ecosystems by reducing fishing pressure on wild fish species. Raising Cobia offshore, far from sensitive ecosystems and in strong ocean currents, gives the fish ample room to grow and thrive in a ratio of 97% ocean and 3% fish.

SAPPHIRE SHRIMP - WILD CAUGHT MEXICAN SHRIMP
 

Over the centuries, shrimp fishing has gone from an artisan practice to an industrial pillaging of the sea. Independent fisherman with their one net small scale approach are not able to compete with the industrial boats that drag from the sea floor more shrimp in day than these fisherman could catch in a year.

Also the destruction to habitats, sea turtles, and bycatch has been horrific with industrial shrimping. Instead of giving up some fisherman decide to stick to their craft, and create a niche for their sustainably caught, higher quality & better tasting shrimp.

In a small coastal town in Mexico, these fisherman banded together to create a "co-operative" they outfitted their small boats with sails, to harness wind energy & save on fuel costs.

They cast their nests by hand and only catch the shrimp they need and any bycatch is returned to the ocean unharmed, making this a bycatch free fishery as well.

These techniques yield a higher quality shrimp with the lowest bycatch and fuel consumption per pound in the world.

Once the catch is returned to the land, the shrimp are processed following the highest international standards, ensuring good environmental practices, fair conditions for workers, and state-of-the-art processes and equipment. This allows us to offer the highest quality shrimp with the lowest impact on the environment and the only Fair Trade Certified Shrimp in the world.

VIKING SCALLOPS - WILD CAUGHT USA
 

Not all scallops are created equal, so its very important to know your source and how and where the scallops were caught. But even for people in the seafood industry this is easier said than done.

Most scallops sold have been added with preservatives and water to increase their weight & size and extend shelf life, these leads to lower quality tasting and a "rubbery" texture.

PureFish scallops are sourced directly from the boats & processor to ensure the highest quality, never treated with chemicals and never injected with water or anything. It was not easy, but with our decades of experience we were able to provide our customer with what we believe is the best wild caught USA scallop.

Family owned & operated boats sustainably catch the scallops. The scallops are then hand shucked one at a time on board out of the shell. The scallops are then packed in cheese cloth bags to allow drainage and the scallops to "dry".

The scallops are then immediately shock frozen to lock in freshness & texture.

Chilean Sea Bass - Patagonian Toothfish
 

Chilean Sea Bass is one of the most prized & revered fish in the sea, it's seen on many of the top restaurant menus and is considered the "most expensive fish" on most menus.

Yes its origins are more of an unknown fish that no one wanted to buy with a name like "toothfish" named after its protruding teeth from the fisherman that first caught this fish by accident.

It wasn't until it was rebranded as "chilean sea bass" that chefs wanted to start offering it on their menus, and the rest is history.

The allure of this fish is its dense "meaty" flesh and extremely high oil content that lends itself to a "meaty" yet "silky" texture.

Its high oil content come from the toothfish adapting to its environment. It lives in some of the planets coldest darkest waters, so its dark skin can camouflage it from predators will its high fat content keeps them more insulated as they tend to live over 2,000 feet below the surface of the ocean. Ya thats some dark & cold waters..brrr
